Tiki O’Toole’s is the culmination of over five years of dreaming, saving, and building. Born out of the pandemic, when gathering together felt impossible, Ryan envisioned a private yet communal bar where friends could feel truly welcome, appreciated, and connected.

After years of sketching plans, setting aside savings, and enduring a lengthy construction process, that vision is finally a reality. On Saturday, September 20, 2025, the doors swing open.

What Is Tiki O’Toole’s?

Part Irish pub, part tiki bar - and entirely one-of-a-kind. It’s a place to:

  • Relax with a strong drink (or maybe four).

  • Swap stories with old friends and strangers alike.

  • Leave with more memories than you arrived with.

On paper, it doesn’t make sense. But in spirit, it makes perfect sense.

From the Emerald Isle to the Hawaiian Islands, Tiki O’Toole’s is proof that no matter where you’re from, it’s always island time once you step inside.

The Lore

Why is it called Tiki O’Tooles?

Long ago, on a misty Irish morning, Paddy O’Brien set sail aboard the fabled Irish Rover, a mighty ship laden with dreams and bound for exotic lands. Paddy was a jack-of-all-trades and a lover of life, known for his knack for storytelling, his love of hearty Irish food, and his insatiable curiosity for the world beyond the Emerald Isle.

But fate had other plans. One stormy night, the Irish Rover met her doom, dashed against the rocks in a tempest of fury. As the lone survivor, Paddy clung to a piece of driftwood, drifting for days until he washed ashore on a hidden tropical island—a lush paradise of swaying palms, turquoise waters, and the faint aroma of coconut and roasted pineapple.

Rather than despair, Paddy saw opportunity. With the resourcefulness of an Irishman and the ingenuity of a sailor, he began to build a new life on the island. From the wood of the shipwreck, he fashioned a bar, a warm and welcoming refuge for the island’s castaways and wanderers.

Paddy mixed what he knew best: rich Irish stews, hearty breads, and frothy pints - with the vibrant flavors of his new tropical home. He swapped potatoes for plantains, whiskey for rum, and infused his hearty Irish fare with the sweet and spicy notes of island cuisine. He adorned the bar with relics of his past life: ropes and barrels from the Irish Rover, shamrocks carved into bamboo, and a toucan he lovingly named Tiki.

Over time, Paddy’s bar became a legend, drawing dreamers, travelers, and misfits from all corners of the world. He called it Tiki O’Toole’s, named after his old, deceased drinking pal, Slugger O’Toole, and a place where the warmth of Irish hospitality met the carefree spirit of the islands. Patrons danced to the lilting tunes of fiddles and ukuleles, sipped on Paddy’s signature “Emerald Mai Tai,” and feasted on dishes like Coconut Colcannon and Pineapple Shepherd’s Pie.

Though Paddy has long since joined the great céilí in the sky, his legacy lives on at Tiki O’Toole’s. Every pint poured and every tiki torch lit carries the spirit of that bold Irishman who found his home where the green of Ireland meets the blue of the tropics.

The Real Story Behind the Bar

The Legacy of Grande and Papa

Tiki O’Toole’s isn’t just a bar - it’s a tribute to my maternal grandparents, Grande (pronounced Grand-E) and Papa, whose love and lives taught me what hospitality truly means.

Grande was a first-generation Irish American - proud, spirited, superstitious, and never without her whiskey… except on Sundays. She carried her heritage with pride and shared it generously, filling every gathering with stories, laughter, and tradition.

Papa, her husband of over 50 years, was a Marine in World War II who returned home forever changed by the Pacific. He fell in love with Hawaii, Trader Vic’s, and especially the Mai Tai. Back in Brentwood, he built a bar at his home - with a Dutch door, a serving window to the backyard, and endless memories created with family and friends. His bar became the heart of the home.

Tiki O’Toole’s honors them both. The Dutch door, the serving window, and the tiki spirit come from Papa. The Irish backbone, the superstitions, and the whiskey warmth come from Grande. Together, their legacy lives on in every drink poured, every laugh shared, and every moment invested here.

This bar may seem like it doesn’t make sense, but in truth, it makes all the sense in the world. It is their story, their love, and their hospitality, blended into one lasting legacy.

The Sand Dollar Society

The Loyalty Program of Tiki O’Tooles 

At Tiki O’Toole’s, loyalty isn’t measured in receipts - it’s measured in sand dollars. Each one is a promise that you’ll be back to share another story, another laugh, another memory.

How It Works

  • First Visit: On your maiden voyage, you’re asked to sign and date a commemorative sand dollar. That shell is “deposited” into the Shadow Box Bank, kept safe like a treasure chest of time.

  • Return Visits: When you return, we open the bank together, fish out your sand dollar, and carve another date notch - proof of another memory made.

  • Five Visits: When your shell bears five notches, you’re no longer just a visitor. You become a VIP — a Very Island Person.
